Chocolate Fondue Fountain

Chocolate fondue fountains present a classic recipe in a modern and novel way. Whereas traditional chocolate fondues are served in a special pot suspended over a heating element, the fountain presentation provides a sense of whimsy and fun while preserving the communal, shared nature of the dessert.

Precooked fondue is poured into the central bowl of the machine, which is equipped with a heating element to maintain temperature and consistency. A small pump conveys the warm liquid up through a series of concentric, tiered spouts. The resulting curtains of flowing, liquid chocolate circulate perpetually through the system. A chocolate fountain - a striking centerpiece and infallible conversation starter - fills a room with the heady aroma of warm chocolate. Small plates and long-handled fondue forks are generally provided.

Common varieties include dark chocolate, milk chocolate, and white chocolate. Unlike a cheese fondue, which generally only uses bread for dipping, a dessert fondue can use many different kinds of foods to create intricate flavor pairings: cut fruit, candy, brioche, cookies, cake, sweet breads, mint leaves, or even frozen bananas work well with a coating of warmed chocolate.

Bringing the Party Home
Long a mainstay of buffets and banquets, industrial chocolate fountains and consumer models are differentiated mostly by their capacity. Catering and party rental companies can provide fondue fountains for special occasions, such as birthdays or weddings. Since interest in fondue has grown so intensely in recent years, many models affordable enough for the home have been developed. While the larger, industrial models can accommodate as many as 100 guests, smaller products for the home work in exactly the same manner, but hold only a few quarts of liquid at a time. Look for a model that disassembles easily, can be cleaned with a sponge, and has some dishwasher safe parts.
